The closest I come to gussying it up is a few drops of hot sauce and a grind or two of black pepper.

One of the happy memories of my childhood was eating grilled pimento cheese sandwiches at lunch counter of the City Pharmacy in Clover, SC. Years later, I learned to make my own. During the time I lived in NYC, I included my home made version on a cheese tray for a cocktail party. My New York guests completely abandoned the costly camembert and jarlsberg to dig into the pimento cheese - a novelty to them, but which they consumed with great delight!

We should compare recipes, Brad. I might've even grilled one or two of those pimiento cheese sandwiches for you since I worked at City Pharmacy from about age 15 until college. It wasn't good PC I'm afraid . . .

Nothing beats pimento cheese - especially on a Ritz cracker. At the restaurant, we add a fried green tomato before grilling to the pimento cheese for a sinfully good sandwich.

Growing up in Tennessee, I loved pimiento cheese sandwiches, barbeque chips and a Dr. Pepper when we went on a picnic.

Your recipe is very similar to the way my mom still makes it in OK for our day-trips and picnics on the way. The only addition she ever makes is chopped pecans (pronounced pee-cans! LOL!)but that's not required. The sharp cheddar is definitely what lifts it above the ordinary store-bought stuff (horrors!) that most people think of as pimento-cheese. Thanks for keeping up a find tradition!
